Not just in summers, bruschetta is always an instant ‘yay’ in my cookhouse. Serve it as a snack, antipasto or a light lunch, this versatile dish blends well with anything. I usually pair bruschetta with other main Italian dishes like pasta, lasagna or risottos, however it is also a fusion hit with other starters like nachos, roll wraps, kebabs and many others.
With the popular tomato basil bruschetta adorning our dining tables often, I enjoy melding it with other ingredients like vegetables, beans and cheese. So this time, I thought of blending my olive garlicky bread in a few coloured bell peppers, tomatoes, cheddar cheese with good seasoning of salt and pepper. Oh, I so love it when it is lightly baked for a perfect warm bite. To add more to the weekend tone, I chipped in tortilla chips and fresh guacamole.
