Ahh! How much I love Bagel. Initially when I started having bagel, I totally relished it’s very simple form – warm and toasted with cream cheese spread. An absolutely delightful quick breakfast option on any day.
However, as I started exploring bagel options, I was quite impressed how many food blogs, recipe shows and my local cafes in my neighborhood presented bagel in various forms. Out of which I found that there are plenty of sweet bagel toppings in vogue, so similar to donut options, but I mainly vouch for savoury toppings, so fresh, green and perfect for breakfast or a light lunch.

And today for my savoury bagel, for once I am not using my ripe avocado for guacamole. Yes, I am so fascinated by this fresh dip, I dont allow myself to try anything else. Nevertheless, I have saved it for my bagel – Here I present, simply mashed avocado lightly seasoned with lemon juice salt and pepper & garnished with cherry tomatoes & basil on warm & toasted bagel. To make it a little mightier lunch, I have served my bagel with a good portion of sauteed mushrooms & tomatoes. My perfect Lunch Option on National Vegetarian Week – Day 5.
