I am a big fan of noodles. Serve me these long thin threads in any form, I will definitely love it. My first noodley love began with famous Maggi Noodles back in India and the love grew up to everything and anything noodlicious today.
Of which, soupy noodles is my favorite bet during wintery days. It makes a perfect evening snack, a quick warm meal and best option watching movies late night.
However, as London had no mood to bring sunshine (in summer) today, I cooked up this easy, quick and succulent recipe ready in 10 minutes! This one-pot recipe has the goodness of aromatic broth and goodness of noodles which is packed with Asian flavors, spicy aroma and a good hint of sweet chili.
Thin wheat noodles with your choice of veggies, kick of ginger garlic, seasoned veg broth, splash of soy sauce, chili sauce, sweet chili sauce and a little mild thickness of corn flour slurry.

Notes –
I added onions, capsicum, mushrooms and carrots to this recipe. You can any veggies of your choice like broccoli, beans, snap peas or even tofu
You can adjust spice and sweet levels according to your preference. I added green chilies and a little sugar to get a balance of this spicy-sweet one pot meal
I added hot water to the noodles to put it on simmer. If you want this to be more flavorful, you can add veg stock too.
