Hi Everyone. After a short little break, I am back with a bang with my one of the favourite easy, quick and healthy vegan dinners.

Whether you are a vegan or a vegetarian, this Mexican chilli con carne is full of big flavours and a very healthy dinner choice. With your choice of beans and vegetables and a good portion of tomatoes, this one pot dish is perfect to perk up your dull meals.
It is packed with protein, nutrients and good fibre. This is also a good quick fix to for busy weeknights or even to please a crowd.

I made this quick meal with kidney beans, peppers and tomatoes served with Turmeric Rice and Tortilla Chips. Fresh sliced avocado as a side blends well too.

Tip – if you have leftover veg chilli, this chilli goes well with baked potatoes and grated cheddar cheese on top.
