Rainbow Vegetable Bake

Just a hearty mix of your choice of roasted veggies swirled in the goodness of herbs and olive oil on a luscious layer of marinara sauce topped with richness of alfresco sauce and cheddar cheese with a huge round of black olives garnish baked for a light dinner!!

Oops! A very long description isn’t it? But a quick recipe for a delightful weekday!

Well I love bakes! Simple gather a variety of different ingredients top it with cheese and let the oven do the job.

For this simple veg bake, I roasted diced potatoes, courgettes, peppers and butternut squash in olive oil, mixed herbs, salt and pepper. I topped on a thick layer of rich tomato sauce (I usually stock these sauces in freezer, defrost it and ready to use) and covered with white sauce and cheese. I missed to add pesto in vegetables which could have given a nice fresh herb taste. Never mind, next time!
