There are a lot of stories about National Vegetarian Week in the UK online and I kept wondering what to write about today. I had a few bagels at home and had not much mood to get into extensive cooking, so thought why not write on my new found love Bagel. Here it is –
Bagel! Never knew this kind of bread existed when I was in India. And when I tasted this couple of times here in the UK, I was totally impressed by the quality, texture and taste. This glazy ring-shaped roll originated in Poland is made from plain yeast dough that is dropped briefly into nearly boiling water and then baked. I love bagel in many toppings like Bagel Pizza, Hazelnut Bagel or simple toasted butter bagel. But today, I tried something new with my own twists – Pesto Veggie Bagel.

Simply toasted bagel, and brushed good pesto, sprinkled chopped cucumbers and cherry tomatoes, olives, salad leaves, cheese and seasoned with salt and pepper. I baked for 10 minutes to get that super crunchy yet chewy texture.
