Call it a Pound Cake, Loaf Cake or Tea Cake, Over the years, the recipe has travelled to many countries and had its own journey with the advent of new ingredients, modifications and techniques. I have always seen loaf cake slices served in English breakfast, afternoon tea or simply with coffee in London. Ever since I have seen these soft alluring cakes, I really wanted to try it. This time, after getting all ingredients right, I baked a lovely vegan orange loaf cake which is extremely easy, soft and flavourful.

Wow! Orange Cake! I really like a little addition of fruits in my cake. Last time it was a Choco-berry cake (https://theplatterdelights.food.blog/2020/03/17/chocoberry-cake-topped-with-hazelnut-choco-cream-ganache/), and today am I here with a moist cake with freshly squeezed orange juice and zest. This amber loaf cake is prepared from scratch and by far this is the best fluffy vegan cake I have ever baked.
I am a vegetarian, and usually I prefer eggless desserts when I am trying them in the kitchen. While hunting the recipe online for a simple eggless loaf cake. However, once I read this vegan recipe online by Shivesh Bhatia, a young baker blogger from India (https://bakewithshivesh.com/vegan-orange-loaf-cake/), my mind changed.

I picked this recipe as it had a cool combination of brown and organic sugar and mainly because it consisted of all simple and basic ingredients which are usually found in any kitchen. It is very simple recipe. Just mix dry and wet ingredients separately and fold then together until combined. And bake it for 30-40 minutes. (I baked for around 45 minutes, and a big tear appeared on my cake…Ouch!)
That’s it! A traditional English sponge tea cake with a delicately zesty orange twist is ready. I sprinkled a little icing sugar and served this cake with vanilla ice cream.

Give your own twist to the recipe –
- Add a pinch of cinnamon to the batter. Orange & Cinnamon gives a nice woody taste.
- Add any berries of your choice – Cranberries, Raspberries, Blueberries or just sprinkle 1 tsp of your favorite berry powder.
- Nuts! You cant go wrong with nuts in any form of dessert!
- For all chocolate lovers – Add choco chips. Orange & Chocolate goes well.
- Top it up with whipped cream, or ice cream or orange glaze
P.S – I made this with freshly squeezed orange juice. You can add store-bought juice to the recipe but!! Nothing beats the bloom of fresh juice with natural sugars.
